Coffee processing

Processing changes the cup.

Processing is one of the clearest ways a buyer can shape flavour expectations. It should be discussed alongside origin, cultivar, harvest conditions, drying, storage and the final quality file. Processing is not a guarantee of a particular cup, but it is a useful part of the lot specification and sampling conversation.

Washed

The fruit is removed before drying. Washed coffees often show a cleaner structure, brighter acidity and more transparent origin character when well executed. Buyers should still ask about water management, fermentation time, drying speed, turning, storage and how the station protects the lot from taints and defects.

Natural

The coffee cherry dries with the seed inside. Naturals can deliver fruit-led, winey or full-bodied profiles, but consistency depends heavily on cherry selection, drying conditions, turning, rainfall protection and careful removal of damaged cherries.

Honey or pulped natural

Some or most mucilage remains on the seed during drying. Honey styles can sit between washed and natural profiles, with sweetness and body influenced by how much mucilage remains, how evenly the lot dries and how the producer manages turning and storage.

Process is a control system

A useful process file records cherry selection, pulping or depulping method, fermentation vessel, whether the process was aerobic or oxygen-limited, time, temperature, pH where monitored, washing, drying surface, turning, weather interruptions, final moisture, storage conditions, packaging and the lot code used through milling and export. These details help a buyer compare like with like and investigate variation instead of relying on a process label alone.

Fermentation needs a control plan

Anaerobic and extended fermentation describe a range of oxygen conditions and process choices, not one universal recipe. They can create distinctive lots when cherry maturity, sanitation, vessel conditions, temperature, time and drying are controlled, but they can also create vinegar, solvent-like, over-fermented or inconsistent flavours when the system is poorly managed. Ask for a process log, representative samples and evidence that the lot was kept separate from other batches.

Drying, storage and taint prevention

Drying often determines whether a well-run process arrives as a stable, clean lot. Raised beds, protection from re-wetting, regular turning, hygienic surfaces and controlled final moisture reduce risk, while wet pockets, slow drying, contaminated water, odours and damaged packaging can create defects or food-safety concerns. Common trade practice is to target roughly 10 to 12% moisture, but the contractual specification and destination requirements should control. Moisture percentage is not the same as a complete water-activity or storage assessment.

What travels with the lot

For commercial review, the process description should sit alongside the sample protocol, physical quality file, traceability record, packaging details, storage history and any pre-shipment inspection requirement. Processing can shape flavour potential and risk, but it does not by itself guarantee a cup profile, a premium or acceptance at destination.
